Tbh, it's not really a whole big deal that shouldn't take up three whole pages of forum debate, like it has before. Just use what you like. I myself find that Normal - 80 works the best for me, but that's usually because I play older versions of MC a lot, and am too lazy to change my settings half the time when I change back.
I've used Quake Pro for a while and I've been PvPing fine, however recently I tried switching to lower settings like 100. Currently trying to adjust to 90 slowly by lowering the FOV down by 1 every few minutes, so far it's been going pretty good and it helps a lot in Speed II fights.
But, it's really down to personal preference most often.
Hit boxes are the same, no matter what. It's just the skin that looks different, use F3 and B to see the hitboxes. I prefer quake pro, it makes it seem a LOT faster than normal, and normal looks like Optifine's zoom feature.
85 Will be the most beneficial, never ever use Quake Pro or normal.
Actually some people like broker and me can use QP or normal and do fine. It's a matter of personal preference. I lowered my FOV from 85 to normal and I can strafe/combo much better.

I'm trying out 85, I like it, but I might eventually notch it a little bit lower.
